Homestyle Chicken with Veggies and Pasta

1 TBS Olive Oil
1 pound Boneless, Skinless, Chicken breasts, cut into chunks.
1 Onion, chopped
1 green pepper, chopped
1 carrot, grated
3 cloves garlic, minced
3 medium tomatoes, peeled and chopped
2 TBS Tomato paste
8 OZ mushrooms, quartered
1/4 tsp Red pepper flakes
1 tsp Italian Seasoning
1 cup Chicken Broth
8 Oz whole wheat Penne, or any other short pasta
1/4 cup grated Parmesan Cheese
1/4 cup fresh Basil, rolled and sliced
1 Pound cherry tomatoes, halved
Season chicken with a little Mrs. Dash table seasoning. Warm Olive oil in non stick pan. Brown chicken in pan, then remove to a paper plate and set aside. Add onion, green pepper, and carrots, sprinkle with a pinch of kosher salt, and the red pepper flakes saute lightly for a few minutes, then add the garlic, saute, stirring for another minute or so, then stir in the tomato paste, peeled and chopped tomatoes, seasoning, chicken broth, and mushrooms. Bring to a boil, the reduce heat and simmer lightly while you get the pasta water started. When pasta water is boiling, cook pasta until just al dente, then drain and add to skillet. Stir together, for a couple of minutes, remove from heat, then add the cherry tomatoes, Parmesan, and basil , stirring well.
