3 oz onions,
1/2 bell pepper,
1 cup mushrooms,
2 small jalapenos
1 cup canned tomato sauce
29 oz canned stewed tomatoes, (2 cans)
1 cup canned black beans
1 cup cooked kidney beans
1/2 cup canned Northern beans
1/2 cup
canned navy beans
(any beans can be substituted for above)
1/2 cup canned yellow corn
1/2 cup canned carrots
1 1/4 oz canned pimento
1 Tbsp parsley
1 Tbsp olive oil
1 cup reduced-sodium chicken broth
1 tsp chili powder, or more to taste
Heat oil, saute chopped onions, mushrooms, peppers, and jalapenos, until soft, add parsley and chili powder. Add tomato sauce and canned tomatoes.
Drain and rinse canned beans, corn, carrots and pimento's. add to pan, add chicken broth. Heat to boiling then simmer for 30 mins.
Serve with rice.or on it's own soup style.
adjust amount of chili powder or add more fresh chili's depending on taste.
Vegetarians can change the chicken broth for water
